Sweet gnocchi with cherries and cinnamoncrumb

Earlier this year I already posted a recipe in which I finally was able to get my homemade gnocchi to work. Within that post I also mentioned that I tried a lot of gnocchi recipes, also with prepacked gnocchi.

I found this sweet gnocchi recipe in the February edition of the cooking magazine koken&genieten. A very easy dish based on prepacked gnocchi that will be ready within 30 minutes.

So if you want something really different than this is a perfect dish. A nice sweet dish as a main, but in smaller portions also possible as breakfast or lunch dish or even as dessert with a scoop of icecream.

Ingredients
  • approx. 700 g cherries (jar)
  • 1 tl corn starch
  • 4 el sugar
  • 1 slice of stale bread
  • 100 g butter
  • 1 tsp cinnamon powder
  • 500 g gnocchi (refrigerator)
  • salt
Instructions
  1. We start with making the cherry sauce. Drain the cherries and keep the juice. Stir 3 tablespoons of the juice with the cornstarch and 2 tablespoons of the sugar. In a saucepan, bring the rest of the cherry juice to the boil. Stir in the cornstarch mixture and keep stirring until it boils and let it cooking for about 1 minute, still stirring. Carefully scoop in the cherries.

  2. Next we will make the cinnamon crumb. Pulverize the bread. Melt the butter in a frying pan. add the bread crumbs, the remaining 2 tablespoons of sugar and the cinnamon powder and bake until golden.

  3. And finally the gnocchi. Prepare the gnocchi according to the directions on the package. toss the gnocchi with the cinnamon crumb and serve with the cherry sauce.
