When I have the time I really love to go all out with cooking breakfast for my family. The busy work weeks and often busy schedules during the weekends almost never lend themselves for that, but during (public) holidays we sometimes do have the time and then I dive into the kitchen to prepare a nice table with delicious options.

For years I have looked with a lot of pleasure to photos and recipes of delicious waffle recipes, but further they d by me because I didn't own a waffle iron. Until about 2 months ago our sandwich iron needed replacement and I discovered options with multiple iron sets including ones for waffles! So I ordered that one and since that day I have looked forward to the moment I was able to use them.

This weekend we celebrate Easter en I found that a nice opportunity to finally fulfil that promise to myself. I have found a good base recipe (because I did not want to start difficult) on the site of leukerecepten and started working based on that.

Actually making the waffle batter is not that difficult, and it is also very fun to do with kids. My son certainly enjoyed it very much. Making these will take a little bit of your time, so it certainly is not something for busy mornings, but when you have some time, like we had this morning, it is amazing to do. It will result in very delicious golden waffles, soft on the inside and a little crispy on the outside. I made them this time with hot cherries and dusted with icing sugar, but I think they will also be great with e.g. whipped cream, a scoop of ice cream or fresh fruit.

Instructions

  1. Preheat the oven to 100 degrees. Get the milk out of the fridge. Melt the butter in a small saucepan on low heat and let it cool down a bit.

  2. Mix the eggs in a bowl and whisk with a mixer approx. 2 minutes until they are airy. Add the caster sugar, vanilla sugar and salt and mix for another 2 minutes. Add the milk en the melted butter and mix until an even mixture has formed. Add the flour, with the baking powder and mix shortly until an even batter has formed. Let the batter rest for a couple of minutes while you warm up the cherries.

  3. Put the cherries with their juice in a saucepan and separate 2-3 tablespoons of the juice. Put the saucepan on low heat and stir in the sugar. Mix the separated juice with the corn starch evenly. When the cherries are boiling, mix the corn starch mixture into the saucepan en bring to the boil again. Boil on low heat until a nice sauce has formed.

  4. Grease a waffle iron with the oil. Scoop approx. a sauce ladle of batter in the middle of the waffle form. Close the waffle iron and bake the waffles for about 4 minutes until they are golden brown and cooked through. Keep the baked waffles warm in the preheated oven until you have baked them all. Server the waffles with the hot cherries and dust with icing sugar.
