Since May of this year I made quite some radical changes in my lifestyle. More going to the gym and exercising in general, and eating according to a healthy lifestyle. The results are amazing and to ensure also longer term results I am currently mixing and combining different meal schedules I collected over the last few months.
What I find very important in this lifestyle change is that my family can just keep eating whatever they want, with maybe every now and then a heathier touch :). But I also don't want to spend each night cooking double dinners, because that is not durable on the long term. So I am very happy when I am able to share meals or with some simple adjustments eat more or less the same.

Of course my son loves to eat pancakes, but pancakes with sugar or syrup on a regular basis do not fit in a healthy meal schedule. That is why I am very happy with this dish in the schedule from BenFit , then my family can eat their sweet pancakes just like usual, and I can eat these healthy pancakes.
Pancakes with chicken and mushrooms

Heat a tablespoon of olive oil in a frying pan and fry the onion on low heat together with the bell pepper. Add the pieces of chicken and fry until the chicken is cooked. Add the mushrooms and continu cooking for approximately 5 minutes. Finally add the white parts of the spring onion together with a tablespoon of sweet soy sauce.

Prepare the pancakes according to the instructions on the packet. Spread the chicken-mushroommixture on the pancakes and sprinkle with the green parts of the spring onion. Serve together with the raw vegetables.
