Ginger fried rice with an egg

It's been a long while since I posted something here. I have a really long list of recipes that I want to write down, so when time permits there will be many new recipes in the upcoming weeks.

With the continuously increasing prices, especially for meat, I try more and more to find delicious vegetarian recipes to cook. This recipe for fried rice is from a cookbook by Donna Hay, and is really simple to make. Especially if you have some leftover rice from the day before, that will save you quite some time. If you don't have that, you will have to add the cooking time of the rice to the recipe.

It is a vegetarian dish, but the addition of the fries egg, ensures it feels like a complete meal. In short an ideal meal for the more conscious choice or after a busy workday.

Ingredients
  • 2 tl sesamolie
  • 1 el vegetable oil
  • 1,5 el ginger
  • 4 teentje garlic
  • 325 g pandan rice
  • 60 ml soy sauce
  • 4 eggs
  • 6 stengel spring onions
  • 2 red chili
  • 1 bosje coriander
  • 1 bok choy (steamed, on the side)
  • hot chilisauce (on the side)
Instructions
  1. Cook the pandan rice according to the instructions of the package. In the meantime grate the ginger and slice the garlic. Clean the spring onions and slice on a slight angle. Clean the red chili and cut into thin strips. Chop the coriander. Fry the 4 eggs.

  2. Heat the two types of oil in a large frying pan or wok. Fry the garlic and ginger for 2-3 minutes. Add the cooked and chilled rice and fry for another 4-5 minutes and keep stirring, until the rice is heated up again. Stir in the soy sauce. Scoop the rice into 4 bowls and garnish each bowl with a fried egg, spring onion, red chili and coriander. Serve with the bok choy and chili sauce.
